
3 Layered Cream Cake in 25 minutes
This simple recipe and fantastic idea is not only perfect for a last minute party rescue; the Swedish tradition of birthday cake breakfast in bed; and impressive coffee dates. The leftovers are ideal for spontaneous celebrations with little ones. A surprise party for a favorite teddy, a quick, simple baking activity and cake decorating game. Three Layered Cream Cake (in the oven for 5 minutes) 25 minutes from start to finish – you can’t go wrong with that!
And you can have any shape you like!
How?
…With a pair of scissors!
The basis of the cream cake is a simple Swiss Roll recipe:
3 eggs
150g sugar (2/3 cups; 1 1/2 dl)
95g flour (3/4 cups and 1tbsp; 2 dl)
1 tsp baking powder
1 tbsp water (can be exchanged for orange juice; lemon juice; coffee; etc)
(2 tbsp cocoa powder – optional)
double cream whipped, to cover the whole cake (3 dl)
Different options for the filling to pick and mix between. There are two layers of filling to prepare, so be as creative as you like, and use up whatever you have at home!
Jam
Crushed raspberries
Strawberry slices
1 mashed banana (and a few drops of lemon, so it keeps it’s colour). You can also mix the banana with a little cold custard or vanilla sauce.
Condensed milk toffee
And for the decoration, whatever you like. Some ideas:
Raspberries, strawberries, blueberries, cherries…
Grated chocolate
Hundreds and thousands
BASIC METHOD:
- Heat the oven to 250C / 480F. Cover an oven tray with baking paper.
- Whisk the egg and sugar until they’re fluffy and light.
- Combine flour and baking powder and whisk or stir them gently into the egg and sugar…
- Add the water (or other liquid)
- Pour out the batter onto the baking tray, and spread thinly.
- Bake the cake in the centre of the oven for 5 minutes. Then after a few minutes cooling, lift the baking paper out of the tray.
- Use an extra piece of baking paper to draw the shape you want your cake
- Pin the design to the cake with toothpicks
- Use a pair of scissors to cut the cake into shape.
- Lay out the cut pieces onto a plate.
- While you cut a few more – as many as you like!
- For Mr 1’s birthday cake we used mashed banana for a filling.
- Placed the next layer of cake on top
- And coated that in crushed raspberries
- On with a third layer; coated in more mashed banana
- Then the final layer of cake.
- The kids were happy spreading whipped cream over the top.
- …(A little ’neatening’ up on this one!)
- Clean around the cake
- And decorate with whatever you fancy.
- Voila!

I love that Miss 3 and Miss 6 made their little brother’s first birthday cake. They were pleased as punch with themselves. Taking turns to mix, add ingredients, cut out number ’1’s, spread filling on the layers and ’build’ the cake. And between the five of us, we ate it all up too!

Life with little ones has opened up our cake fillings to a whole new realm! It used to be just jams and butter cream (also delicious)! But bananas and fruit make such a fresh tasting, light summer cake!
