Apricot Almond Cardamon Biscuits

The time I spend cooking and baking, inventing and tweaking recipes until they’re just how I want them to be, tasting and then uhm ‘tasting’ again. Discovering and discussing flavour combinations with the kids, getting their opinions on how experiments have turned out, what might be missing, how we could make them better. I love it.

Apricot Almond Cardamon Biscuits

Miss four and miss seven make such funny faces at exactly the moment it crosses their lips, prepared for a range of responses anything from inedible to their new favorite flavour in the world. Which considering it’s mostly been sweet bakes lately is far more likely to be the latter. Instant recognition of the delights of sugar!

So here’s another.

Apricot Almond Cardamon BiscuitsDelicious biscuits with soft chewy pieces of apricot, coarsely ground, crunchy almonds and a hint of cardamon. 

 

Apricot Almond Cardamon Biscuits

Makes 30 small biscuits (6cm diameter, 2 1/3 inches)

 

115g unsalted butter (and a little extra to lightly grease two baking trays) (1/2 cup)

85g fine cane sugar (just less than 1dl; 3/8 cup)

1 egg yolk

200g all-purpose flour (and a little extra for rolling out on) (2 ¾ dl; 1 3/4 cups)

40g almonds, ground in a food processor (½ dl; 1/4 cup)

55g finely chopped soft dried apricots (2 oz)

1½ ml cardamon

  1. I have to admit I am a bit rubbish at biscuits – I don’t often make them is my excuse. These flavours sound amazing and they look as good as your apple crackers (and that’s a very high compliment!) #CookBlogShare

  2. Oh, I love that combination of nuts and apricots! Sometimes I add nutmeg or cinnamon instead of cardamom!
