Favorite Sun-Dried Tomato HummusI’m crazy about homemade hummus. And there are no end to the little tweaks you can make, to turn a regular hummus into the talking point of the table. This recipe is one of my favorites, pairing hummus with some of my favorite Italian ingredients: Parmesan and sun-dried tomatoes.

Sun-Dried Tomato Hummus

(Serves 4 people as a side dish)

 

230g pre-cooked chickpeas

2-4 cloves of garlic, crushed (depending on how much you like your garlic)

1/2 tsp tahini paste

4 tbsp extra virgin olive oil

5 sun-dried tomatoes (bottled in oil, not dry)

50g grated parmesan

Sea salt

Fresh ground black pepper

Add a little water to get the desired consistency

 

METHOD: 

Favorite Sun-Dried Tomato Hummus

 

Favorite Sun-Dried Tomato is also perfect for your baby or toddler.

For babies don’t add any salt, and use only one clove of garlic. Add additional water to get the final consistency you’re looking for.

For toddlers, you’re ready to go. The recipe needs no adaptation.
