Frozen Raspberry Cream Oatmeal Cake

This cake is unbelievable! The oatmeal layers are crunchy and sweet, complemented perfectly by the fresh, tart, berry packed semifreddo filling.

Imagine biting through thin crispy HobNobs or Anzac biscuits, into creamy, delicious, frozen mousse.

Just look at it!

Now I’m going to give you the recipe for a huge cake! But there are no eggs in it, so it’s easy to divide if you’d like to make a smaller one.

This is the dream dessert for adult and children alike!

You can make the oatmeal biscuit layers up to a day in advance, in that case cover and store them at room temperature. The frozen raspberry cream is best made up to 30 minutes before serving. Store the cake in the fridge once made.

For beautifully styled individual servings, use a round cookie cutter to cut circles of oatmeal biscuits to stack.

 

Frozen Raspberry Cream Oatmeal Cake

Serves 8-10

Note. As there are no eggs in the recipe it’s easy to half it if you want to make a smaller cake.

 

For the oatmeal biscuits:

250g porridge oats (7dl /3 cups)

250g sugar (3dl/ 1 ¼ cup)

150g butter (melted)

1 tbsp flour

1 tsp baking powder

 

For the filling:

500 ml double cream (5dl /2 cups)

150g frozen raspberries (2-3dl /1cup)

150g frozen blue berries (2-3dl /1cup)
