Grandma’s Swedish Apple Cake

I loved this cake from the moment I first tasted it! It’s the perfect balance of springy, light and juicy, and yes, I have a weak spot for cinnamon and apples. There is absolutely nothing ‘healthy’ about this recipe, so take out all your eggs, sugar and butter and let’s bake!

Grandma’s Swedish Apple Cake

4 eggs

330g sugar (1 1/3 cups/ 3dl)

– And an additional 55g sugar (1/4 cups/ 1/2 dl) – to coat the apples

225g flour (1 1/2 cups/ 3 1/2 dl)

2 tsp baking powder

200g butter (7oz)

2-3 apples

3 tsp cinnamon

Breadcrumbs

You will also need an oven dish approximately 30 x 20cm / 11 x 7 inch

 

 

I love that after having tried multiple recipes for this Apple Cake, the best one was Grandma’s.

      This post is a special tribute to my husbands Grandmother, who lovingly took me on as one of her own long after mine were gone - I will love them always.
