Roasted Chestnuts, Cognac Butter & Blue Cheese
There’s no better way to celebrate the beginning of Autumn than with Roasted Chestnuts. And you don’t need to have any previous experience to grab a few of these delicious treats and roast them at home in your oven, or over an open fire.
Take a look at The Ultimate Guide to Roasting Chestnuts for tips on making sure you’ve got the right kind of chestnuts, and how to select the freshest sweet chestnuts available.
(Serves 3-4 people as a starter, bar snack, or outdoor treat)
500g fresh chestnuts (1 pound)
50-60g butter (4 tbsp)
2 tsp fine champagne cognac (cognac or brandy)
Serve the Roasted Chestnuts with Cognac Butter & Blue Cheese
140g blue cheese (5 oz) – I prefer a rich, full 45% fat blue cheese
Sweet cognac butter and rich creamy blue cheese with the mild nutty warmth of freshly roasted chestnuts is a combination made in heaven.
And when it’s this easy there’s no reason not to give them a go!
