Roasted Chestnuts, Cognac Butter & Blue Cheese

(Serves 3-4 people as a starter, bar snack, or outdoor treat)

500g fresh chestnuts (1 pound)

Cognac Butter

50-60g butter (4 tbsp)

2 tsp fine champagne cognac (cognac or brandy)

Serve the Roasted Chestnuts with Cognac Butter & Blue Cheese

140g blue cheese (5 oz) – I prefer a rich, full 45% fat blue cheese
