Sweet Potato Gnocchi with Sage Bacon, on a bed of Baby Spinach

(For 4 people)

 

For the Sweet Potato Gnocchi:

1kg sweet potato (2 1/4 lb) – cooked and cold

1 egg

450g all-purpose flour (7,5 dl / 4 cups)

1 1/2 tsp salt

 

300g baby spinach (11 oz)

250g back bacon (1/2 lb) – cut into small pieces

1 small onion – finely chopped

1 tbsp olive oil

2 cloves garlic – crushed

Freshly ground black pepper to season

A handful of fresh sage leaves (half to flavour the bacon, half to add as the final touch to the finished dish)

1-2 vegetable stock cubes (to boil the gnocchi in)

 

METHOD:

 

 

Serve the sweet potato gnocchi with the baby spinach, topped with crispy bacon and fresh sage.
