Three Bean Summer Salad

Compliment your summer favorites, with this quick & delicious 3 Bean Salad, bursting with protein. Perfect for camping trips, and for this one you can leave the greens at home!

A fantastic side dish for anything you want to grill on the BBQ. Or simply serve with sliced salami and a fresh crispy loaf of artisan bread, for an easy, filling lunch.

 

Three Bean Summer Salad, Chick Pea, Kidney Bean, Black BeanThree Bean Summer Salad

1 small carton, or tin, chick peas

1 small carton, or tin kidney beans

1 small carton, or tin black beans

2 ripe tomatoes on the vine

8-10 sun-dried tomatoes

60g grated parmesan cheese (1/2 cup, 1 dl)

2 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

4-5 grinds black pepper

3-4 pinches sea salt
